A new food truck in town offers Cajun cuisine to Carthage — the Cajun Cartel.

Owner Sarah Luker-Credeur is from South Louisiana.

“It was in the works for a couple of years, and it took so long to come together due to COVID and things like that,” she said. “We had this trailer custom built in Monroe, Louisiana, it just took a long time for it to get here. So that was kinda it... food is an important part of our family.”

The Cajun Cartel opened up at the beginning of the year.

“We actually opened the week before Christmas, but it was really just to iron out the kinks before crawfish season got started,” Luker-Credeur said.

The restaurant does plate lunches during the week and live boils on the weekends. They also deliver for free anywhere in the Carthage city limits.

“We’re open year round, crawfish are just a weekend thing,” Luker-Credeur said. “We primarily focus on Cajun food during the week. Gumbo, crawfish etouffee. We’re famous for our crawfish queso potato. I probably sell 40 or 50 of those things a day. So that’s the No. 1 thing we actually sell here.”

The menu changes every day, with updates on their Facebook page, The Cajun Cartel. Their bestseller meal is available every day though.

Business has been been good.

“It was really really good when we first opened, and then I think the new kinda wears off and it kind of levels off, but it’s good, we’re about doing like anybody else is... It’s very exciting, it’s fun,” Luker-Credeur said. “I love getting to talk to everyone in the community and seeing all my friends and family come by and meeting new people. There’s so many people that come from out of town just to eat here, so it’s kinda cool.”

Luker-Credeur isn’t alone in this endeavor though. Her chef, Chris Berry, graduated from culinary school in 2018.

“Just finding Chris was kind of a cool weird thing that fell out of the sky. He was like ‘I just graduated culinary school; I need somewhere to work.’ And I was like ‘That’s funny ‘cause I’m short one cook.’ It’s really nice (having him here),” she said. “We work very well together, and you really have to get along with the ones you work with in such small quarters. He’s very talented.”

The Cajun Cartel is located at 505 W. Sabine St. in Carthage. They’re open for lunch from 10:30 a.m. to noon Tuesday through Thursday and on weekends they are currently open from noon to 7 p.m.
